This salad was good, but let’s be honest… it was all about the goat cheese. Creamy, tangy, rich — it melts slightly into every bite and pulls the whole thing together like it was meant to be there.

What’s in the salad
- Fresh peaches
- Homemade peach vinaigrette (recipe below)
- Assorted nuts and seeds for crunch
- Goat cheese — the creamier the better
The peach vinaigrette
So many of you asked for this one. I’ve been making it nonstop — it’s sweet, tangy, and doesn’t have any crazy pucker.
- Peach cider vinegar
- Olive oil
- 1 tsp Dijon
- Pinch of salt and pepper
- Local honey, to taste
Shake it all up in a jar and pour it over your salad. That’s it. It’s so easy and so good, and I love that a good vinegar with the “mother” still intact does double duty for gut health too.
