The One Recipe I Make in Every Kitchen

No matter whose kitchen I’m cooking in — a rental with two pans, a friend’s place, my own — there’s one dish I always come back to.

Why this one

It uses ingredients I can find almost anywhere, takes one pan, and comes together in under 30 minutes. It’s forgiving, too — swap the vegetables, the protein, the spices, and it still works.

The base

  • Olive oil, garlic, and onion to start
  • Whatever vegetables need using up
  • A protein of choice — beans work just as well as chicken or shrimp
  • A starch: rice, pasta, or crusty bread on the side
  • Salt, pepper, and a squeeze of lemon at the end
