Why this one
It uses ingredients I can find almost anywhere, takes one pan, and comes together in under 30 minutes. It’s forgiving, too — swap the vegetables, the protein, the spices, and it still works.

The base
- Olive oil, garlic, and onion to start
- Whatever vegetables need using up
- A protein of choice — beans work just as well as chicken or shrimp
- A starch: rice, pasta, or crusty bread on the side
- Salt, pepper, and a squeeze of lemon at the end
